OhSheGlows' Amazing Vegan Pumpkin Pie

 Hi all, thanks for reading this post. I will keep this post short and sweet.
This is my first week being vegan and I am enjoying it thoroughly. Unfortunately I am not feeling confident enough at the moment to try my own recipe, so I have been going through my cookbook collection for some recipe ideas.



 I love (non-vegan) pumpkin pie. I would consider pumpkin pie to be one of my top sweet treats, best topped with a large scoop of vanilla ice cream. Although I have only been vegan for less than a week, I have owned Angela Liddon's book, Oh She Glows, for year now. The book includes a recipe for vegan pumpkin pie and I thought I ought to try it as my first vegan dessert. The recipe I used in this post featured in the book, but is similar to the Sweet & Salty Spiced Pecan Crust which can be found on the website.

The recipe is fairly straightforward, so much easier to do that a classic pumpkin pie. First of all, you are required to soak some cashews overnight which is used in the filling. To crust is made of oats, dates, pecans, and coconut oil, and baked for a short while in the oven.

The filling is raw and includes of blended pumpkin puree, maple syrup, coconut oil, cashews. After the crust has cooled down, the pie is filled and refrigerated.

Again, I can't stress how much I love pumpkin pie, so I was really hoping that this vegan pumpkin pie would live up to the name.... and

It DID!

 

This pie is so good that I actually PREFER this to the actual thing.

So, if you love pumpkin pie, I would strongly recommend you try this recipe, whether you are vegan or not! I would of course recommend buying Angela Liddon's book. I have tried many recipe and I have never been disappointing.
